Filleting Blue Gill (Instructions)

Bone most all fishes the same way. If you can bone one type of fish, you've got it made. The bone structure is basically the same on most fishes. Start cutting at the head end and cut along the backbone then around the rib cage ending at the tail. Turn the fish over to repeat this method on the other side. This time the cutting is started at the tail end of the fish and the same cutting is done going from the tail end to the head end. Any size fish can be filleted, but I do not bother cutting fishes (boning) that are less than 8-9 inches long. Small fishes are very time consuming.
