Cod in Cider Sauce
2 lbs. Cod fillet (Hake or whitefish)
1 onion (finely chopped)
¾ cup Double Cream (Heavy Whipping Cream)
½ tsp. Fresh Mint (chopped)
2 Apples (peeled & diced)
1 ¼ cups Dry Cider
Butter
Salt & pepper

Heat butter in a frying pan. Add onions and fry for 5 minutes. Add cider, mint, salt and pepper. Bring to a boil and boil for 5 minutes, then turn heat to low. Add Cod fillets and poach for 10-15 minutes. Remove the fish and keep warm, reduce the sauce and add the apple, thicken with the cream. Take care the fish is poached not boiled.
Serves two.
