Fried Monk Fish
Monk Fish (Lophius Americanus)-is harvested in the
Atlantic Ocean. Monk fish may be sautéed sliced thin and
deep fried-cured and used in chowders and used as an
ingredient in Paella.
Listed below is a very tasty and easy Monk fish dish
(remember this fish has a very dense texture-if cooked to
long the meat will become tough-to eliminate this problem
cut fish into slices which will cook quickly).
4 Monk Fish (sliced-about 6 ounces each)
Flour
White Pepper
Salt
Vegetable Oil
Onions-minced
Celery
Chopped Parsley
Garlic
Take the sliced Monk fish and dredge in seasoned flour
(flour, white pepper, salt) fry quickly in a good vegetable
oil until golden brown on each side (use high heat) and
in another pan sauté minced onions, celery, chopped
parsley, & garlic when these vegetables are tender add
a can of diced tomatoes to mixture (heat until very hot)
then spoon this mixture on a plate and place Monk fish
on top of vegetables and sprinkle with a good grated
cheese.
